8 Green Asparagus
1 Teaspoon White Wine Vinegar
1 Tablespoon Chopped Parsley
1 Bunch Chives
Sevruga Caviar 15 G
Boiled Lobster Claws 2 For Garnish

Method

Cut the fillet of beef into thin slices, then crumble finely using a sharp knife.
Finely chop the shallots, cook for a few seconds in boiling water and mix with meat.
Divide it into two equal parts in two molds that will place special than 6 cm in diameter, filled to half height.
