1 Chilli Deseeded

Method

Soak the meat for about twelve hours in cold water with a tablespoon of vinegar.
Drain, cut into pieces and put them in a casserole, preferably earthenware, with the bay leaf, garlic, chilli and rosemary, cover with water, bring to a boil, add salt and cook, with lid, over low heat, for about four hours.
