Method
Chop the onion, garlic and bacon and put them in a pan with oil and lard to brown, add the meat you've already larded with chopped parsley, ham and pepper and then tied.Cover the pot and cook over low heat and when the onion begins to brown and discover wet with red wine, stirring occasionally with a wooden spoon.
