100 G Cooked Ham
90 G Sweetbreads
30 G Butter
12 Pitted Green Olives
Tomato Pulp
1 Egg
Dry White Wine
Wine Vinegar
White Flour
Olive Oil

Method

Wash the sweetbreads thoroughly, then blanch them in boiling, salted water acidulated with a spoon made of vinegar.
