Method
Soak the raisins in a bowl filled with warm water, coarsely chopped pine nuts and remove the skin from the sausage with a fork shelling.Soon after, in a nonstick skillet, sauté for a few minutes veal with olive oil, after which add the sausage and continue cooking for 5-6 minutes, stirring frequently.
Next, have the meat browned and drained into a bowl and add the eggs, 1 tablespoon breadcrumbs, pine nuts, raisins, drained and dried and the peel of 1 orange one.
Mix all ingredients well, until the mixture is homogeneous, and, with the palms of the hands formed into balls that leave several times roll in breadcrumbs.
Finally, arrange in a baking pan greased with olive oil and continue cooking for about 15 minutes turning occasionally.
