1000 G Sirloin Steak
100 G Dry White Chestnuts
1 Rib Celery
1 Carrot
1 Onion
1 Sprig Rosemary
1 / 2 Cup Dry White Wine
30 G Butter
Cream

Method

Heat a frying pan in a tablespoon of oil with the butter to brown the meat and put a few turns of string tied with white kitchen, salt and pepper.
Chop celery, onion, carrot and rosemary and add everything into the pot, you brown, sprinkle with the wine and let evaporate.
Cover and continue cooking in the oven at 200 degrees for 30 or 40 minutes: 30 minutes if you want it rare, 40 minutes if you prefer pink.
Boil the chestnuts dried and then mash.
Remove the roast from the oven, let stand for about 10 minutes, untie and cut into slices.
