Ingredients
200 Cl Supreme Sauce (see Recipe)150 G Brown Ground Beef
50 G Butter Into Small Pieces
1 Pinch Cayenne Pepper

Method
Pour the sauce supreme in a clay pot and let it warm to very high flame and when it will be very hot, add the veal and brown stock, stirring with a wooden spoon, mix well.Bring the sauce almost to a boil, then add butter and cayenne pepper.
Let the butter melt completely, then turn off the heat and continue to work long in the sauce with a wooden spatula.
Keep the sauce warm in a water bath, without letting it cook further.
