1 Onion
2 Cloves Garlic
1 Celery
1 Carrot
3 Tablespoons Peeled Tomatoes
Dry White Wine
Broth
1 Box White Cake Beans
Extra-virgin Olive Oil

Method

Buy already boiled tripe and cut into strips, or prepare it at home.
Chop and fry the vegetables with a drizzle of extra virgin olive oil.
Stir frequently and add the tripe.
Add the wine, salt, pepper and let it evaporate.
After a few minutes put the tomatoes.
Cover the pan and continue cooking over low heat.
