1000 G Veal Tripe
Onion
Celery
Carrot
Parsley
1 Sprig Rosemary
1 Bay Leaf
Some Sage Leaves
400 G White Beans
Olive Oil
Broth
Parmesan Cheese

Method

Cut tripe into thin strips.
In a saucepan a little 'oil, chopped onion, celery, carrot and parsley, add whole (so you can then remove) the bay leaf, a sprig of rosemary and some sage leaves.
Add the tripe and fry in browned, add the broth and beans, which must (if raw, or almost cooked add) and wishing a few tablespoons of tomato sauce.
