Method

Slice the onion and soften in olive oil and butter, add the meat cut into cubes and season it.
Add a bay leaf, sprinkle with flour, salt, pepper, tomato paste and 3 ladles of broth.
Bake for 1 hour and 30 minutes, adding more broth if necessary.
Shortly before the end add the olives, pitted and cut in half.
