Method

Prepare the filling first.
Larded beef with the garlic cloves cut into slivers, lay them in a casserole dish (preferably earthenware) and sprinkle with oil, then add 50 g of butter and the finely chopped onion.
Brown meat and onion, until the two ingredients have browned, then add salt and pepper.
Sprinkle with one third of the wine, cover the pan (almost hermetically) and cook for 8 hours, turning often and basting the meat as with the remaining wine.
About 15 minutes before the expiration of the specified time, prepare the sausage: peel, cut into small pieces and let it blow over high heat in remaining butter, shredded with a fork.
Then extract the meat from the cooking liquid (which should be quite small) and pass it through a meat grinder along with the sausage and the cup, collecting the mixture into a bowl: add the egg, a generous pinch of pepper, a nutmeg grated, the sauce and Parmesan cheese.
Stir thoroughly to mix the ingredients together, then cover the mixture and leave it on hold while you make the dough.
Then prepare anolini, cook in the broth and serve with Parmesan cheese.
