1 Knob Butter
2 Sprigs Rosemary
1 Cup Dry White Wine
3 Tablespoons Olive Oil

Method

Rinse the rabbit in water acidulated with vinegar, dry it and lay them on the bench.
Flatten with a meat mallet, sprinkle with salt and pepper and cover with slices of bacon.
In a bowl mix the minced beef, 1 sprig of sage, rosemary and 1 garlic, chopped too, and a pinch of salt.
Spread the mixture on rabbit covered with bacon, using a wooden spatula, then roll it tightly and tie the roll obtained using a sturdy kitchen string.
Heat oil and butter in a large saucepan and brown the rabbit over high heat for 4-5 minutes, then pour the white wine into the bowl and let it partially consumed.
Add the rest of the sage and rosemary, salt and pepper and cook the meat for about an hour and a half, over low heat, turning often.
When the roll cooked, remove from pan, slice and privatelo twine.
Arrange the slices neatly made on a serving dish, sprinkle them with the sauce, thinned with a little hot water if necessary, and serve immediately with a side of roasted potatoes.
