Ingredients

1000 G Fat Rump Of Veal
6 Mandarins
1 Cup Armagnac
100 G Butter
1 Tablespoon Olive Oil
20 G Parsley
1 Pinch Marjoram
1 Ladle Broth
1 Tablespoon Flour

Method

Rump and put the flour in a pan where you have melted butter and oil.
Brown it well on a low flame on all sides for about 10 minutes.
Then add the juice of tangerines, the Armagnac and a ladle of broth.
Season with salt and add the marjoram.
Cover with a wrap of aluminum foil and place in oven at 200 degrees for approximately 1 hour.
When the cooking is complete, release the pan from aluminum foil and put it back on the heat, add the chopped parsley and 1 tablespoon of flour diluted with a little warm water.
Stir for a few minutes until a soft cream, pour over the meat slices in the dish.
