2 Cups Orange Juice
Grated Orange Rind
1 Clove Garlic
1 Pinch Oregano
1 Pinch Pepper

Method
In a saucepan melt the butter.Add the orange juice passed through a strainer, a teaspoon of grated rind, garlic, chilli and a pinch of oregano, salt and pepper and mix together.
Rub the meat with more salt and pepper, place in a baking dish, pour the mixture and bake in a preheated oven at 180 degrees for about an hour and a half.
Often wet the meat with its sauce.
Serve in slices with the sauce.
