Method

Peel the potatoes, wash them, dry them, cut them into cubes you make regular brown, over medium heat, in hot oil flavored with a sprig of rosemary and crushed Dall'Aglio, turning them often because it colors well on all sides.
Meanwhile, clean the mushrooms with a damp pezzuolina, cut into pieces that will join with the potatoes when the latter are three-quarters cooked.
Raise the flame to cook the mushrooms quickly without emitting excessive water, discard the rosemary, season with salt and a generous grinding of pepper and a pinch of fresh rosemary, minced, then transferred into a dish suitable to prepare and serve at once: it goes well with roast pork.
