40 G Butter
1 Tablespoon Spicy Mustard
1 Teaspoon Worcestershire Sauce
6 Tablespoons Cognac
Olive Oil

Method

Heat the oil in a skillet, cook fillets over high heat, remove them and keep them warm.
Discard oil from skillet and let melt half butter, blend the mustard, add the Worcestershire sauce, cognac and a pinch of salt.
Cook the sauce, stirring over high heat.
Off the heat add the remaining butter and melt.
Put the fillets on a serving dish, sprinkle them with the sauce and serve immediately.
