Ingredients

1 Carrot
1 Chopped Onion
1 Sliced €‹â€‹celery
1 Cup Red Wine
4 Slices Of Beef Tenderloin
Rosemary
Rooms
Pepper
15 G Butter

Method

Put the cut vegetables in wine and simmer over low heat until thick and prepared to make transparent.
In another pan, sauté in a little oil the slices of tenderloin, cook 2 minutes on each side having added garlic, rosemary, salt and pepper.
Add the wine sauce and cook the meat for a few minutes.
Remove the meat from the pan and add 1 / 2 tablespoon butter to the sauce.
Serve slices of tenderloin with sauce poured over and resting on a leaf of butter.
Garnish with small slices of polenta just browned in butter.
Wine: Donnaz (Aosta Valley), 5-6 years.
